Girl Scout S'mores Cracker Candy
Selling Girl Scout cookies is really one of the best and worst aspects of being a Scout Mom. It's such a great lesson in setting and working towards goals and understanding the work that goes into success.
Of course, there's also practicing patience and kindness when you run into the not-so-nice strangers at cookie booths, and let us not forget ALL THOSE COOKIES. Chances are, you will order too much and at one point or another grow - gasp - bored of them.
Thankfully, bloggers and cookie moms have you covered with a host of possible recipes to make with your overflowing stash. Today, I'm sharing such a dish featuring this year's *new* cookie, the S'more!
Girl Scout S'more Cracker Candy
Ingredients
- 1 box of Girl Scout S'mores
- 1 sleeve of snack crackers, saltines would work too
- 2 sticks of butter
- 1 1/2 cups light brown sugar
- vegetable oil spray
- At least 1/2 cup each of mini chocolate chips and marshmallows
First, give a rimmed cookie sheet a quick spray with vegetable oil, I use 100% Canola, then line it with your cookies and crackers.
Next, add the butter and sugar to a heavy bottomed pot and bring to a boil over medium heat. Be sure to stir it and make sure the sugar is completely dissolved.
Once you have a steady boil, see the above picture, let the mixture boil for a full 3 minutes WITHOUT stirring it.
Then, remove from heat and pour over your cookies and crackers. Bake for 8 minutes on 350˚.
Remove the cookie sheet from the oven, sprinkle everything with mini chocolate chips and marshmallows. Then, broil for an additional minute or until the marshmallows have browned.
If your cookie sheet is prone to sticking, I'd recommend letting the candy cool for about 10 minutes and then cutting it up and letting it continue to cool on wax paper.
Otherwise, you just let it cool in the pan and when it's no longer warm to the touch break it out into pieces.
I promise you, this stuff is so, so, sweet and so, so addictive!
